“We had an outstanding turnout last year for our first meeting and have received several requests to do this again,” said Dr. Jeff Savell, one of the leaders of the Texas Barbecue program at Texas A&M and E.M. “Manny” Rosenthal chairholder in the department of animal science.
The meeting will be held from 10 a.m. to 5 p.m. on December 14 at Texas A&M University in College Station. It will include lectures as well as hands-on demonstrations.
Topics include:
- economic outlook on supplies
- prices and availability of beef, pork and poultry products
- a primer on U.S. Department of Agriculture quality grades and marketing claims
- alternative meat cuts for barbecuing
