Overview

Although harvesting wild game is not the norm for most families, there is a trend toward sourcing protein from local markets and the local ecosystem. This trend, called 'localism,' was coined in 2007 when the New Oxford American Dictionary recognized 'locavore' as the word of the year. Many locavores now include those who produce or harvest local game animals. This publication also includes four wild game recipes: Venison enchiladas, creamy stuffed meatballs, wild pork carnitas, and smothered wild pork backstrap.
